I love having a warm, filling breakfast in the morning. Unfortunately, I rarely get to eat before leaving for work, and when I do I usually eat cereal. Blah. What’s a busy mama to do?
The answer was as easy as a click.
I found a recipe for baked french toast that can be made overnight. I changed the amount of the ingredients to fit what we needed and got to work.
- 2 cups of vanilla soy milk
- 3 eggs
- 1 tablespoon of vanilla extract
- 6 slices of whole grain cinnamon bread
Cut the slices of bread into cubes and spread out in an 8 x 8 baking dish. In a separate bowl, mix the soy milk, eggs and vanilla extract. Pour the mixture over the bread. Push the bread into the mixture to make sure all the pieces are thoroughly covered. Cover and store in refridgerator overnight. In the morning, heat your oven to 350 degrees. Bake the mixture for about 50 minutes or until a toothpick comes out clear. Once done, you can top it with the topping of your choice; I topped it with pure maple syrup and gobbled it up — even my baby loved it.
If you forget to make the mixture the night before, don’t worry. Just make the mixture the morning of and let it sit in the fridge (covered) for about 30 minutes. That’s actually how I made mine this morning. It is truly delicious and will definitely remain in the breakfast rotation!
