January is one of two birthday months at my home; both sons are in January and my husband and I are in August. And since I’ve been on a roll with baking from scratch, I decided to try my hand at making cupcakes for oldest son’s birthday party at school. Moments like these are when I officially feel like a mom. Hehe.
I found this recipe and tried it because I already had everything required at home. I love when that happens. I followed the recipe completely with the exception of making the frosting. I used store-bought cherry frosting because I didn’t have time to make any this go-round; I’ll definitely try to in the future though.
The result? The cupcakes were a hit! The kids and teachers really liked them too – no cupcakes came home! They had a lighter feel than store-bought cupcakes and weren’t as sweet, which was a delightful bonus. Plus, I can use this as a base for future cakes and cupcakes. Oh, yeah!
I would not call myself a baker just yet, but I do take pride in actually pulling this off. I’m still surprised every time something I make turns out right. Yay, me!
